I grew up eating this and don’t make it as often as I would like but I did make it today as a side to fried shrimp. This recipe is for four slices for one person. The egg goes a long way so you won’t need any more to make more than four slices. All you need is:
1 egg, beaten
1/4 crumbled Parmesan cheese
pinch of salt & pepper
4 slices of 1/2 thick zucchini
Beat the egg in one bowl and mix cheese, salt & pepper in another. Dip each slice in egg then both sides in the cheese. Fry on medium for 3 – 3 1/2 minutes on each side, until the cheese is golden brown. You don’t want the zucchini mushy, you want it a little firm.
